Blueberry blondies are a luscious twist on the classic blondie, featuring a soft, chewy texture with bursts of juicy blueberries throughout. The sweet, buttery base complements the fruit’s tangy sweetness, creating a perfectly balanced treat

Ingredients

  • ½ cup unsalted butter (melted)
  • 1 cup brown sugar
  • 2 eggs (room temperature)
  • 1 tbsp vanilla extract
  • 1 cup frozen blueberries
  • 1 cup of all-purpose flour
  • ¼ tsp of baking powder
  • ½ tsp salt
Crumb Topping
  • 6 tbsp butter melted
  • ¾ cup flour
  • ½ cup sugar
  • ¼ teaspoon cinnamon
  • 2 tsp lemon zest
  • ¼ teaspoon salt
Lemon Glaze (Optional)
  • 1 cup powdered sugar
  • 2 tsp fresh lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tbsp milk (or milk alternative)

Instructions

  1. Preheat the oven to 350 degrees and line a 9x9 pan with parchment paper.
  2. Melt the ½ cup of butter and allow to cool slightly.
  3. While the butter cools, make the crumb topping. Mix all of the ingredients from the crumb topping in a bowl, use a fork to cut the mixture together until you have a nice crumble. Set off to the side.
  4. For the blondies. Add the melted butter and brown sugar to a mixing bowl and mix with a spatula until combined.
  5. Add the eggs, vanilla extract, and mix until just combined.
  6. Use a spatula to scrape down the sides of the bowl and add the flour, baking powder, and salt. Fold the ingredients together, it's okay if a few lumps remain. It's important to not over mix the mixture.
  7. Fold in the blueberries. Transfer to the baking pan. Then top with crumb topping.
  8. Bake for 30-35 minutes or until the edges are golden brown. Allow to cool before serving.
  9. Optional: lemon glaze. In a bowl, combine all the ingredients for the lemon glaze and mix with a whisk until nice and smooth. Once the blondies have cooled, drizzle the glaze over the blondies. It’s important that the blondies cool so the drizzle doesn’t melt off!
